Smoking Fish and Meats with Woodfire Briquets
Woodfire works great in outdoor controlled-air smokers, regular grills and gas grills. It imparts a natural, hardwood flavor and provides consistent smoke and heat. Prepare your food items as you normally would for smoking, then follow the lighting instructions. After 25 minutes, add food to smoker and one or two additional briquets on top of the coals. Shut air down on the smoker and flames will go out, producing smoke. If you're using a regular or gas grill, close cover, leaving air intake on cover open enough to keep Woodfire briquets smoking. Reintroduction of air or leaving the cover off will reestablish flame.
